Equipment

  • 1 Baking Sheet
  • 1 Saucepan
  • 1 Pastry Cutter / Knife
  • 1 Mixing Bowl

Ingredients

Baton Sale Dough

  • 3 cups All-purpose Flour (300 gr)
  • 1 Egg
  • ½ cup Water
  • 1 + 1/4 sticks Melted Butter (150 gr)
  • 1 pinch salt

For The Topping

  • 1 Egg Yolk
  • 1 tbsp Everything Bagel Seasoning
  • 1 tbsp Grated Parmesan Cheese

Instructions

Prepare the Dough

  • Preheat your oven to 360°F (180°C). Line a baking sheet with parchment paper. Prepare the ingredients in advance to shorten the preparation time. If desired, add the dried herbs to the ingredients for extra flavor. Sometimes I use thyme and parmesan cheese in the dough - it turns out delicious.

  • Create a well in the center of the flour. Add the egg and mix it in. Gradually add the water as you mix. Once the egg and water are combined, start adding the melted butter and the salt. Continue adding the butter while incorporating the flour mixture.

  • Mix until a smooth dough forms. Use your hands to gather the remaining flour and shape the dough into a round ball. Place the dough in a deep container, cover it with plastic wrap, and refrigerate for 10 minutes to allow the butter to chill again and the dough to firm up.

  • Roll Out the Dough: On a lightly floured surface, roll the dough to about 1/8-inch (3mm) thickness.
Cut into Sticks: Cut the dough into thin, uniform sticks, about 1/2 inch wide. (I do not measure because I like the uneven appearance of Baton Sale)

Adjust Seasoning and Toppings

  • Transfer the dough sticks to the prepared baking sheet. Brush with the egg yolk. Sprinkle with Everything Bagel seasoning and grated Parmesan cheese.
Bake in the preheated oven for 20 minutes, or until the Baton Salé are golden brown and crispy.
