  • 1 tbsp granulated sugar
  • ½ tbsp salt
  • 4 tbsp olive oil
  • 1 packet instant yeast ~10 gr
  • 2 cups warm water ~400 ml

For the Tomato Sauce

  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp butter
  • 2 cloves garlic
  • 425 gr tomato sauce ~15 oz
  • A few sprigs of fresh thyme

For the Topping

  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp cumin
  • 2 cloves garlic
  • 2 medium yellow onion
  • A few sprigs of fresh thyme
  • 400 gr steak ~ 0.9 pound
  • 500 gr mozzarella
  • 1 tbsp butter

Instructions
 

1. Prepare the Pizza Dough:

  • Activate the Yeast: In a small bowl, combine 2 cups of warm water (about 400 ml) with 1 tablespoon of granulated sugar. Stir to dissolve. Sprinkle 1 packet (approximately 10 grams) of instant yeast over the water. Let it sit for about 5 minutes, or until it becomes frothy.
  • Mix Dry Ingredients: In a large bowl, whisk together 5 cups (500 grams) of flour and ½ tablespoon of salt.
  • Combine Ingredients: Make a well in the center of the flour mixture. Pour in the activated yeast mixture and 4 tablespoons of olive oil.
  • Knead the Dough: Stir until a rough dough forms. Transfer it to a floured surface and knead for about 8-10 minutes, until smooth and elastic.
  • Let the Dough Rise: Place the dough in a lightly oiled bowl, turning it to coat all sides with oil. Cover with a damp cloth or plastic wrap. Let it rise in a warm place for about 1 hour, or until doubled in size.

2. Prepare the Tomato Sauce:

  • Cook Garlic and Butter: In a saucepan, melt 1 tablespoon of butter over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute, until fragrant.
  • Add Tomato Sauce: Stir in 425 grams (about 15 ounces) of tomato sauce, 1 teaspoon of black pepper, and 1 teaspoon of salt.
  • Add Thyme: Add a few sprigs of fresh thyme to the sauce. Let it simmer for about 10-15 minutes, stirring occasionally.
  • Remove Thyme (if desired): Once the sauce has thickened slightly, remove the thyme sprigs. Set the sauce aside to cool.

3. Prepare the Topping:

  • Season Steak: Season 400 grams (approximately 0.9 pounds) of steak with 1 teaspoon of salt, 1 teaspoon of black pepper, and ½ teaspoon of cumin.
  • Cook Steak: Slice the steak thinly. In a skillet, melt 1 tablespoon of butter over medium-high heat. Add the steak and cook to your desired doneness, about 3-4 minutes per side for medium-rare.
  • Sauté Onions and Garlic: In the same skillet, add a bit more butter if needed. Sauté 2 medium yellow onions, thinly sliced, with 2 cloves of minced garlic until soft and caramelized, about 8-10 minutes. Add a few sprigs of fresh thyme for extra flavor. Remove from the stove and let rest.

4. Assemble and Bake the Pizza:

  • Preheat Oven: Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven to heat.
  • Shape the Dough: Punch down the risen dough and divide it into portions (for four pizzas or two large pizzas). Roll out each portion on a floured surface to your desired thickness. (with this dough recipe, I make 4 thin medium pizzas.)
  • Bake the Dough: Transfer the pizza to a baking sheet or pizza stone. Bake for 10 minutes. Remove the dough from the oven.
  • Add Sauce and Toppings: Spread a layer of the prepared tomato sauce evenly over the dough. Top with slices of mozzarella cheese, cooked steak, caramelized onions, and garlic.
  • Bake: Bake for 15-20 minutes, or until the crust is golden and the toppings are cooked.
  • Cool and Serve: Remove the pizza from the oven and let it cool slightly. Slice and serve.
